I imagine, depending on the circumstances, any of the methods described in this thread would work great, which makes me feel kind-of silly for asking. However, for the record, the flat-head-screwdriver-under-the-pad-at-the-open-end-and-pry-out seemed to be the best rough-and-ready method, and worked fine first time I tried it.

Thanks to all for the various ways of popping the pads out. Now, if only it was easier to find original Campy pads in good shape...<sigh> Not to mention the old-style pad-holders..
