Jonathan,
I think if you look at your Huret, you will find that it has it's own stop built into a plate on the back of the pivot. That is how the Shimano Crane I run on my Follis is set up, and I recall seeing Simplex Prestiges that way as well. The pivot bolt screws into the dropout, but the stop is provided on the derailler itself. It is often spring loaded as well. The stop can be machined into the DO (I did it on the Simplex DO on this same Follis), and you can use a regular derailler. Or, you can shop around for one with the stop plate built in, but you may have a tough time finding one!
