I think the various 2000 series Ideales had different amounts of padding between the plastic base and leather cover, with 2002 more padded than 2001, but I only have one 2000 series saddle, so I can verify this. My 1972 UO-8 had Simplex Prestige derailleurs, Normandy Sport hubs with steel rims, steel cottered crank, Mafac Racer brakes, AVA bars and stem, mild steel "Peugeot" tubing. It had QR on both wheels. I seem to recall the AO-8 was slightly less expensive, maybe with QR on front wheel only. I'll try to check my copy of Chuck's repro Peugeot catalog for the specs of each.
