The way I would approach that would be to plunge only the remaining stem extension into ice water -since it will cool quickly - and try to avoid quenching the steerer.
However, if we're not talking over a few hundred degrees Fahrenheit, I wouldn't be too concerned about embrittlement of the steerer. Others' thoughts...?

Reading the propane trick for removing the made me wonder - using this technique is the temperature low enough from the heating to avoid embrittlement issues? This is a quenching technique - and if the temperature is not too high, I suppose its not an issue. But if the steerer was really heated, I suspect it could be. Could folks add some light on this?
