From my limited experience thus far, I feel that what I have now is pretty good. Triple front 28-39-53 with a 7 spd. FW 13-30. I suppose a 28 would go the trick. This would cover almost any extreme terrain that any sane man would wish to encounter on a trike. I suffered hard to make the climb on our route in a 39-30 and 39-26 but I made it. The 28T would cover any other steep inclines short of a wall. Until I find otherwise, I consider this combination "proper" for me anyway.
