In addition to Ofmega (as Bob Reid has pointed out), I believe that Ambrosio still exists. The Torelli "Dominator" tubular rims on my Mondonico are supposed to have been fabbed by Ambrosio. Plenty of other decidedly defunct mfrs to choose from...

I think a CR jersey is a great idea and I'd like one, even if designed by committee, as long as we can keep the price reasonable (hopefully less than $100).
