Well, if your sticking to the French theme: the Maillard 700 / Spidel ROUE-LIBRE "Super Plus" Compact 7! In the mid-1980s this is what Mavic used and also most of the teams in the TdF irregardless of the country of origin of the rest of the parts (Campagnolo or Shimano) on the team bikes. (The name changed to Sachs when they bought out Maillard.) And of course the Sedis Sport bushless chain.

As for history and the different groups? Ahem...

MAVIC...A Brief History of MAVIC Bicycle Components (Une Brève Histoire des Pièces de Vélo MAVIC) -- 422 pages, covers Mavic components from 1977 through 1995, nine catalogs, ten brochures, and two workshop manuals showing how to service all Mavic components, plus a Mavic Timeline, an invaluable tool for dating your bike and its parts. Color cover. $ 50 from Velo-Retro
