I like 'em just a little longer than they are, though that length is definitely in the "nice" range. Too short makes my hands feel claustrophobic on the bars. This isn't completely irrational, as I have caught the backs of my stringback gloves on the housings a time or two, like when sitting up to ride no hands.

Also a little extra also lets you: 1) Change stem length or height 2) Cut the housing should it get kinked at the brake lever. 3) If the inner wire gets frayed you can shorten it and the housing
