You're in luck: "Duane Kennard's Fabulous Cavalcade of Bike Catalog Scans" has what you're looking for. Check out the Bikecology '81 catalog, pages 6 & 7. The chrome fork, the drilled dropouts, the Colnago seat-stay caps, it's all there. It also shows the decal schemes (with & without white bands on seat and down-tubes).

At the bottom of page 7, it says that the Mexico with special light tubing weighs 5lb 9.5oz in the 58cm size, which is ~ 2540 gm. It also says that a 57cm Super weighs 5lb 15oz, which is ~ 2695gm. Your 56cm weighs 2610 total -- which suggests it's likely a Super.

My recollection is that Colnagos came with fluted seatstay caps until 1980.
