I think the confusion here is that 'butcher' has a couple of meanings:

1. To kill or dress animals - 'dress' meaning to prepare for use. Since saddles were/are made from leather, to modify for personal preferences would be to butcher.

2. To kill brutally or senselessly.

3. To botch or mess up.

Therefore one could have the sentence, "Your Honor, the reason I butchered Chuck *, was that he butchered the saddle butchering on my Brooks." ;^)
