Sounds like a really interesting project. Like Fred, I'd be interested in seeing before and after pics.

As for the stuff you need, Vintage Velo has the hoods:

And I think I have some generic un-lined white housing if you get desperate. The tires will probably be the hardest to find (and the most expensive) bits.
