I agree, but I'm not enough of a fanatic to want to spend the time learning how to fine-tune nail-on cleats. Then I stumbled on Duegi's "traditional" cleats which utilize the last 2 holes of Look-compatible soles. See list-member Dave Perry's Bike Works site in NYC:

Further investigation found Duegi's "Veloce" shoe:

Although it is made of modern materials and has a clipless-compatible sole, it is a 1979 design, which makes it (arguably) on-topic. It certainly would *appear* more appropriate than today's Velcro-closure footwear on CR-era bikes (even if one was using clipless pedals).

2) Who's selling Veloces? (I think they're new for 2003)
