I haven't ridden a trike, let alone in the snow. But I did commute one winter, and I didn't get much if any builup of ice etc. in the derailleur/freewheel. I did get lots built up on the rims though. The effect looked like some of todays deep aero section rims (The really big ones like Hed if there was enough snow)

I think almost anyone could benefit from riding in the snow, It certainly improves your balance.
