I have three 1950s English road/track bikes and they were all geared 79", (48 x 16 [one is 24 x 8]) when I got them. I tried lower gears but didn't like it. I ride them every day here in SoCal, flats and rolling hills.

What coaches advocate for starting out in Spring after a winter layoff to develope a spin has no bearing on my year round riding. I'm not "training" for anything; the motivation is pleasure.
