I don't think that they were stock models per se with a manufacturer specified equipment list so you can probably put whatever suits your fancy on it. Nothing wrong with a Nervar crankset apart from the difficulty in finding replacement rings due to the odd 128mm BCD. I think they are elegant in appearance (so does Hilary unless that was just ad copy in one of his auction listings).
GB bars and stem would be a good choice.
