I am for simplicity wherever possible, and though I sometimes use a triple for long steep mountain rides, I prefer a double for everything else, except for just plain flat rides when a fixed gear is just fine.

By the way Steve (and others who might be interested) - I can build you a Campy triple with a 26 to 32T if you want to keep the Paramount more authentic but with lower gears. The mid and large should not be too spread for a front derailleur to shift them comfortably. I like a 30-42-47 combo myself. Shifts fine with Campy front derailleur. I have a large supply of Ofmega triple bolt/spacers and a very accurate jig to drill a Campy or other 144 bcd cranks to take a 74 bcd inner ring, of which there are a multitude of nice ones that will work (including TA!) This costs $50 incl the bolt/spacers + whatever small chainring you want, with your crank.
