I use a Morati cyclocross bike with titanium front forks for a touring bike in the summer and race it in the winter. I use a 50x34 chainring set up that is about equal to a triple but a lot less complexity and weight. The major problem with a cyclocross bike is that the real ones have high bottom brackets usually about 11 inches. You'll notice the higher center of gravity but will get used to it. It is also more a strech to put you toe down when stopped. One the other hand, most cross bikes have laid back angles and are very stable. Also, cantilever brakes were a pain in the 50's and 60's and they can still be a pain today.
