It appears that your experiment dealt with windup at the rim. The force applied at the hub from pedaling is vary slight and in line with the strong axes of the wheel. Side load from cornering and out of the saddle climbing and sprinting is where tied and soldered wheels are stronger. I can clearly feel the difference when stressing the wheels during the building process. Try measuring deflection with side loading.
