I have looked for M8 x 1.00 (fine) pitch x stainless bolts on the web, off and on, for 3 months. after many hours of looking i finally found one source. no choice as to length or half-threading like a GB bolt. no stainless nuts are available - only bolts. i am quite capable of trimming a long bolt, but it turns out that fine pitch / stainless is a very difficult combination to find.
this is why i have bought M8 x 1.00 (fine) pitch steel at my local hardware store and have refinished and replated them (brush chrome) at my house.
