First, I'd like to know what's wrong with the Mafac canti's. My tandem came with a set, and stopped fine. Is it that the shop didn't recongnize and/or trust them, or was there something particularly wrong with them? Cracked arm, broken spring or something like that? And in these modern days with studded high performance brake shoes showering down on us, I'd expect the Mafacs to be great stoppers.

Failing that, I've had good luck with Avid cantis, low profile for heel clearance and otherwise a reasonable set. Just not very retro proper.
