Riding no handed is a good way to have a bite en route or to just stretch out your back and give your arms and shoulders a rest for a minute on a long ride. It seems safe enough to me on a reasonably smooth road and away from intersections or hidden places for something to appear in your path. It's also just plain fun and my perfunctory default test for alignment and good mechanical order in the wheels, hubs and HS. If I can easily ride no hands, I figure the bike is straight enough for me without measuring. But I'm like that.
