Over the years I have found using surgical stainless steel pins work best for mounting jerseys. Yes, you are piercing the fabric. However, the alternatives are to use an adhesive or simply smashing the jersey under glass. Adhesives and fabric rarely work well together. As to holding the jersey in place under glass, the end display looks terrible.

Basically, you lay the jersey out on top of a 100% museum rag board, maneuver until the desired look is achieved, then pin it down. Typically, I use two pins in the collar of the jersey, one on each shoulder, 3 on each sleeve, and 4-5 more for the body for a total of approximately 14 pins. As the sharp end of the pin will protrude through the back side of the mat, I then cover the exposed pins with felt bumpers.
