That said, I am really more interested to know what size axles, cones, and bearings I need to get the old three-piece GS hubs rolling.
+++++++++++++++ If I take literally your comment that you want to get the hubs rolling, rather than doing a perfectly true restoration, I suspect that the route is pretty simple. In general, I've been loose and free about substituting complete axle sets (that is, axle, cones, washers). In theory, the contact angle matters, but most have been pretty acceptable. I might hunt a bit for really nice concave-ground cones if it were me, but not sure it matters, given the options. The hardest dimension to get nearly right has always been the diameter of the cone, so there is only a little gap between cone and dust seal. Or, take the shells and a cheap vernier to the nearest bike shop with a trash parts bin of hubs, and see what you find? BTW, bearings should be 3/16", I believe
Best of luck!
