You are right! I had the Pave (in very yellow), I now ride the Black (all black). It is difficult to find something classic and conservative, I have to admit.

AFAIK, the Veloflex Master is a 170-gram 20 mm tire, no? The Pavé is 180 grams and 22 mm wide, I think.

Like Deda, Veloflex and Gommitalia have clinchers that come close to tubulars, at least in appearance: black treads, gum sidewalls. I especially like the Veloflex Master in 22 mm. Very supple at high pressures, very light, durable and puncture resistant.

I have been ruining the Deda rubber for a bit and the make a very suitable ( open) clincher, as well as vintage style tubular. Both have provided a great ride and durability.

Re: 27" tires... Continental makes a nice 27x1-1/8" gumwall tire that's fairly cheap and durable.
