Vintage Bicycle Quarterly Vol. 2, No. 4 had an article on a 1961 Olmo De Luxe. That article also specified when various Campagnolo parts were introduced, and showed photos and Rebour drawings of these early Campagnolo parts. (Back issues are available for $ 10 including shipping.)
Another useful guide is the Campagnolo timeline at http://www.velo-retro.com. There you find dates, but no photos/drawings.
You will learn, among others, that Campagnolo brakes certainly are not correct for that vintage - Campagnolo was not making brakes for almost a decade after your bike was built! In fact, most Campagnolo components just were introduced around that time...
For the Mafac brakes - which are the best brakes for that period, by far, look for the ones marked "Forge Dural." The large "RACER" stamping came only in the late 1960s/early 1970s.
As you are finding out, it is best to do the research first and spend the money afterward. To help with research like yours is one of the objectives of Vintage Bicycle Quarterly.
At least, you probably can sell most of the parts again for almost what you paid. Good luck.
