I always leave the inboard junk on the pedals (I like the toe strap guide). I don't modify my road pedals in an attempt to fool anyone into thinking they are track pedals; just some old style Kalifornia Kustomizing like when you bend your QRs levers into a curve, use a Campagnolo track headset on your road bike or lace up your spokes with a crow's foot pattern. Sets your bike apart from the next guy's chariot.
