There are at least a couple of nice Merckx coffee-table books. The better-known pieces seem to the ones by Philippe Brunel ("Merckx Intime") and Rik Vanwalleghem ("Eddy Merckx: The Greatest Cyclist of the 20th Century"). Lots of great photos.
