I've got black hockey tape on the non-grip portions of my exceedingly off-topic roadified MTB. But I can comment on its suitability for on-topic bikes.

Hockey tape is very thin (no cush at all), very sticky, gets grungy easily, wrinkles easily when wrapping around curves (both because it's so thin and because it's not woven with a bias), and in the heat of the sun can ooze adhesive through to the grip surface.

Other than that it's great bar tape. ;)

I wouldn't recommend it; traditional twill-based cotton tapes are far superior.
