Peter, back in the day (like the 1930s for instance) a pro rider would transfer his leather saddle and handlebars (lots of pro riders would have bars made for themselves) from bike to bike. I see no reason not to use an older leather saddle on a '83 CIOCC as Tony suggests.

A Brooks Select (1980s deluxe version of a Professional) would be appropriate. Even though Eddy Merckx rode leather covered plastic saddles his entire career, there are pictures of him racing with an Ottusi modified Brooks when he was suffering from a large cyst.
