I've recently bought the Gunflint Trail seat bag for my son and the Highway 1 panniers and Sawbill Trail bar bag for myself - they're beautiful, IMHO ...

Another find was the saddlebag from Frost River in Duluth, MN. Since I haven't been able to find Baggins bags, this turned out to be the next best thing. Great retro-look and excellent quality. Their website has several bike bags made from waxed cotton canvas and leather.
