Ah Jerry you've done it again! This is truly a nice and practical build. I admire your choice. I am quite taken by the choice of the 650Bs. They look in scale and complement the overall look.
I had a similar problem with a Peugeot PR-10. It was rideable for me but not in my ideal size. I swapped on a pair of Atom drum hubs I had lace to 26" rims about 20+ year ago. I took off the old mtb tires and replaced them with 26x1.50 tires with a smooth tread. I might have chosen a slightly narrower tire but I am quite satisfied. I did not have to source the brakes because of the drums.
I favor the interesting like Jerry's new WV.
