For me it would have to be my Zieleman (ca. 1974) Type Special. The bike disappears underneath me, the only thing I'm aware of when riding it is the Wrights Swallow saddle. It's a bit heavy compared to my lightest vintage bikes but it eats up the Texas chip n' seal roads like they don't exist, exactly what I'd expect of a bike designed to ride on cobbles. It's dressed in a mix of Suntour cyclone and Superbe components, soon to be all Superbe with the exception of a set of Simplex Super LJ shifters. This is the bike that 9 times out of 10 I'm going to reach for when I go out, and now has me thinking it's time to thin the herd.
