You tell him that the distance on the RH side has to be set so the 5sp freewheel has the correct chainline. The LH side then gets the spacers to fill out the frame width and the wheel is trued to the overall width so the dishing goes to where ever the rim centers up. Tell him that many real bike criterium and time trialers used to and still do this because the need for many ratios is unnecessary on flat courses and with dedicated bicycles the wheel can be stronger and lighter. Besides, you're the customer, you're paying, do it right, or you'll take your business elsewhere. If he knew anything about building wheels, he wouldn't be asking stupid
questions.
