I can't see the picture you linked to...I get this error:

In any case, I think I understand your point. The bike I posted about is a Motobecane Grand Jubile with Huret dropouts, so I think the limits in the Huret documentation apply (24 tooth max, although it can probably accommodate 26 or even 28).
I'm curious about your second paragraph and will ask some questions about it in a new post with a separate subject line.
