I've stripped a few anodized parts, and its really difficult to get the last 10% of the anodizing removed. i think there's a 90% chance the ferrule holes won't be stripped, so there will be funny black circles around all the spokes and it will look weird. the spoke-hole ferrules will prevent you from fully stripping the rims.

a better choice (if you can find them) are these rims :

rigida sputnik (still being made) sun M13II (nos in many places in the USA, harris has wheels w/M13II) torelli master (originally polished) weinmann RM19/219 (usa-made version still available at many USA distributors, and I'm pretty sure aussie too. I think Alex bought the name and makes these again anyway, maybe as X202.)

you could strip any of these silver rims to get what you're looking for ...
