1. Faber's on Monterey Rd. just south of the 280 overpass.
Very old...and if Alex LaRiviere let you inside the building - you might see some old Schwinn (Shaw Bros) racing track bikes from way back when hanging up on the wall. Be sure to lean about 10 degrees to one side when entering/exiting the building.
Bicycle Express on S. 4th and William St.
2. Probably the busiest little bike shop in Northern California does just about everything - classic, modern, road, mtb, single-speed, vintage restores and probably 300+ custom bicycle wheels on average per year.
Ask for Chuck...he also restores vintage Whizzer gas powered bikes.
You didn't ask...but I'll offer one up for Coos Bay, Oregon.
Moe's Bike shop as you leave Coos Bay heading for the bridge that take you further North - Moe's is right at the start of the bridge. Nice guy...nice shop. Lotsa long distance touring bike folks with gear and all use it as a major planned stop for service and supplies and such.
