I'm no metallurgist, but I do know there are perhaps over 100 alloys classed as stainless, with a wide range of properties. Here as bike consumers we don't get the whole story as far as materials go. Think about the term "alloy," as usually used to refer to aluminum used in bike parts. Accurate but not specific.
