Nice looking bike, Rod! The lugs are beautifully done, the work of a true artisan. And I like the down tube cable stops, they have a minimalist appearance that goes with the lugs.
Actually, all of the bikes on your web pages look really nice. The Kvale, the Mercian... just beautiful.
And, if the red pedals don't look right to you on the Eisentraut, it occurred to me that you could swap pedals between the Eisentraut and Kvale; put the red pedals from the Eisentraut on the Kvale, and the gray pedals from the Kvale on the Eisentraut. I think that would look okay, for a while at least...
